Bacon and Sausage Breakfast Casserole

Back to school time at our house means that mornings are busssyy! If I don’t have something prepped no one is getting anything to eat but a baggy of cereal 🤪 Both bacon and sausage are in this week’s bundle so add that to your cart with eggs and sourdough bread and you’re ready to make it! ⠀⠀

Ingredients:

  • 8 slices of bacon, cooked and crumbled

  • 1 lb ground sausage

  • 6 large eggs

  • 2 cups milk (or half-and-half for a richer dish)

  • 4 cups of bread cubes (use day-old bread, cubed)

  • 1 1/2 cups shredded cheddar cheese

  • 1 small onion, finely chopped

  • 1 bell pepper, chopped (optional)

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/4 tsp paprika

  • 1/4 tsp dried thyme (optional)

  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the Sausage and Bacon: In a large skillet, cook the ground sausage over medium heat until browned and fully cooked.

  2. Prep the Casserole Dish: Lightly grease a 9x13-inch baking dish. Spread the bread cubes evenly in the bottom of the dish.

  3. Add the Meat and Vegetables: Layer the cooked sausage and crumbled bacon over the bread cubes. If using, sprinkle the chopped onion and bell pepper on top.

  4. Make the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, pepper, paprika, and thyme until well combined.

  5. Assemble the Casserole: Pour the egg mixture evenly over the bread, sausage, and bacon in the baking dish. Press down lightly to ensure the bread soaks up the egg mixture. Sprinkle the shredded cheddar cheese evenly over the top.

  6. Refrigerate (Optional): For best results, cover the casserole with plastic wrap and refrigerate for at least 2 hours or overnight. This allows the flavors to meld and the bread to absorb the egg mixture fully.

  7. Bake: Preheat your oven to 350°F (175°C). Remove the casserole from the refrigerator and let it sit at room temperature for 15 minutes. Bake the casserole, uncovered, for 45-55 minutes, or until the eggs are set and the top is golden brown.
