Creamy Mushroom Chicken Thighs

Once you understand how yummy chicken thighs are you won’t stop getting them! I am a huge fan of chicken thighs in a creamy sauce with mashed potatoes. Here’s one of my favorites below 👇⠀⠀⠀

Ingredients:

  • 6 bone-in, skin-on chicken thighs

  • Salt and pepper, to taste

  • 2 tablespoons olive oil

  • 1 medium onion, finely chopped

  • 3 garlic cloves, minced

  • 8 ounces cremini or white mushrooms, sliced

  • 1 cup chicken broth

  • 1 cup heavy cream

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1/2 cup grated Parmesan cheese

  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season and Sear Chicken:

    • Season chicken thighs with salt and pepper.

    • Heat olive oil in a large skillet over medium-high heat.

    • Sear chicken thighs, skin-side down, until golden brown, about 5-7 minutes. Flip and cook another 3-5 minutes. Remove and set aside.

  2. Make Sauce:

    • Add chicken broth, heavy cream, thyme, and rosemary. Simmer for 2-3 minutes.

  3. Combine and Simmer:

    • Return chicken to the skillet, skin-side up. Spoon sauce over chicken.

    • Cover and simmer on medium-low for 25-30 minutes until chicken is cooked through.

  4. Finish:

    • Stir in Parmesan cheese until melted.

    • Garnish with parsley and serve.

    • Top over mashed potatoes, rice, or veggies.
