Creamy Mushroom Chicken Thighs

Once you understand how yummy chicken thighs are you won’t stop getting them! I am a huge fan of chicken thighs in a creamy sauce with mashed potatoes. Here’s one of my favorites below 👇⠀⠀⠀
Ingredients:
6 bone-in, skin-on chicken thighs
Salt and pepper, to taste
2 tablespoons olive oil
1 medium onion, finely chopped
3 garlic cloves, minced
8 ounces cremini or white mushrooms, sliced
1 cup chicken broth
1 cup heavy cream
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Instructions:
Season and Sear Chicken:
Season chicken thighs with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear chicken thighs, skin-side down, until golden brown, about 5-7 minutes. Flip and cook another 3-5 minutes. Remove and set aside.
Make Sauce:
Add chicken broth, heavy cream, thyme, and rosemary. Simmer for 2-3 minutes.
Combine and Simmer:
Return chicken to the skillet, skin-side up. Spoon sauce over chicken.
Cover and simmer on medium-low for 25-30 minutes until chicken is cooked through.
Finish:
Stir in Parmesan cheese until melted.
Garnish with parsley and serve.
Top over mashed potatoes, rice, or veggies.
